Sukuna has won many fights due to pure luck, mistakes, or having his adaptation due to a stolen Ten Shadows technique after he possesses the body of Megumi Fushiguro. The only reason he even survived against Gojo is because of multiple complete Ass-pull Binding Vows and adaptation from Mahoraga. He may be strong, but he's a fraud who steals power and still loses even after that.
