a stan is someone who is a really committed fan of a celebrity, sometimes verging on stalker-esque

It is formed from the words stalker and fan.

Stalker + fan = stan.

Stan is when you combine "stalk" and "fan". While you may not actually stalk, it does mean you are obsessed with a brand, celebrity, show, topic, etc.
